- Dans la cuve inox munie de la lame, mettre 5 œufs, 45 g de sucre, 450 ml de lait et 50 ml de liqueur de verveine du Velay. Lancer EXPERT 7 mn / VIT 9 / 90°.
- Répartir la préparation dans les ramequins (8 ou plus selon leur taille) et recouvrir avec des couvercle alu ou silicone (si vous n'en avez pas, utiliser du papier alu)
- Après avoir rincée sommairement la cuve inox, y mettre 500 ml d'eau. Positionner le panier vapeur XXL, y déposer les ramequins. Lancer le programme EXPERT 30 MN / VIT 0 / 120°. Laisser refroidir et mettre les flans au frigo pendant 2 à 3 heures avant consommation.
- Pour la présentation à l'assiette : Mettre 1 c de cassonade sur les flan en la répartissant équitablement sur toute la surface. Passer au chalumeau jusqu'à caramélisation. Mettre 2 cs de verveine dans une petite casserole et chauffer jusqu'à frémissement. Flamber dans la casserole et verser sur le flan. Pour que la flambée prenne bien, il faut que le dessus du flan soit chaud donc bien caramélisé.
- Vous pouvez aussi, si vous préférez sans flamber, mettre 1 cc de cassonade sur les flan et recouvrir d'1 cs de liqueur de Verveine comme sur la photo ci-dessous.
