  1. Lever les filets des Grisets ou les faire préparer par votre poissonnier.
  2. Enlever un maximum d'arêtes à la pince à épiler en gardant l'intégrité des filets.

  9. Mettre 1 à 2 louches de bouillon dans le riz puis remuer jusqu'à absorption complète.
  10. Rajouter les oignons.
  11. Mettre 3 louches de bouillon dans le riz et remuer jusqu'à absorption. Renouveler l'opération jusqu'à ce que le riz soit fondant et un peu croquant au milieu. (Environ 4fois)
  12. Finaliser la cuisson du riz pendant 5-6min en versant tout le Lait de Coco. Remuer régulièrement.
  13. Votre risotto est prêt.
  14. L'idéal est d'avoir une plancha. La mettre à chauffer. Prenez du papier sulfurisé et découper un morceau de la taille de la plancha. Faire cuire vos filets sur la papier sulfurisé environ 5 à 6min côté peau puis retourner et laisser cuire 2min côté chair.
  15. A défaut l'étape précédente peux aussi se faire à la poêle.
