  5. Faites rissoler les lardons, qui doivent être bien dorer.
  6. Quand les légumes sont cuits, mixer-les avec le jus de cuisson pour obtenir la consistance voulue.
  7. Ajouter la crème et réchauffez doucement sans ébullition. Rectifier si besoin l’assaisonnement.
  8. Verser le velouté dans des bols et ajouter les lardons.
  9. Poivrez généreusement et parsemer de persil avant de servir.
