- Feu au maximum, ajouter le vin blanc au mélange oignons/ail et laisser bouillir 1min30. Gratter les sucs de la viande avec une spatule en bois. Ajouter le miso et le concentré de tomates. Mélanger pendant 20 secondes. Ajouter les légumes puis l'eau, les dés de bouillon, puis la feuille de laurier, les tomates cerises et la pomme.
- Attendre que le mélange se mette à frémir et réduire le feu au minimum. Une fois que le mélange se remet à frémir, le mettre sur une plaque électrique, au plus petit niveau. Laisser mijoter pendant 7 heures en retournant la viande toute les heures si celle-ci dépasse de la préparation.
- Possibilité de réduire le temps de cuisson en mettant la plaque électrique sur niveau 2 ou avec un couvercle sur la casserole. Si cocotte, cuisson plus rapide selon le type de cocotte. Compter 4 heures au minimum. La viande doit se séparer sans difficulté et les légumes doivent être fondante.
- En fin de cuisson, ajouter sel en quantité suffisante et (un peu de) poivre.
- Si vous souhaitez manger l'ail, pensez à enlever le germe avant cuisson. Possibilité d'ajouter des lardons fumés à la recette, à cuire avec les oignons. Pour plus de goût, possibilité également d'ajouter un clou de girofle.
