- Préparez la crème de pistache : Battez (batteur électrique) le beurre mou et le sucre pendant 2-3min, ajoutez ensuite l'oeuf et battez 1 min à haute vitesse. Ajoutez les pistaches, l'amande amère et le colorant, mélangez le tout et réservez.
- Préparez la pâte : Dans une casserole, faites fondre le beurre et ajoutez l'eau. Retirez la casserole du feu et ajoutez la farine tout en mélangeant bien. Enfournez 20min à 180 °C puis retirez les billes et pousuivez la cuisson 10 min de plus. Ajoutez la crème de pistache et enfournez pour 8 min.
- Une fois la tarte cuite, laissez la refroidir entièrement et préparez le coulis de framboises. Faites chauffez les framboises et le sucre sur feu doux et laissez tiédir avant de versez le coulis sur la tarte et placez le tout au frigo.
- Préparez la crème chantilly au mascarpone en battant le mascarpone, la crème, le sucre et la fève de tonka sur puissance maximale pendant 2-3 min. Décorez la tarte avec la crème vanillée et quelques fruits et placez le tout au frigo avant de servir.
